I usually consider finding new subreddits a bit challenging, especially when you don’t know what’s out there or how to link to them. You gotta search for things directly or find related subreddits.

Multi-subreddits are good catch-alls for the top posts from many subreddits. Here’s a few that I keep, though I haven’t updated them in a long time. It’ll probably give you at least a few to browse and they’ll have updated links to similar subreddits in their sidebars.
